Pizza base - 1

For the topping:
Potatoes - 1 1/2 cups(boiled, peeled and mashed)
French beans - 10-12 (cut into 1" pieces)
Pizza spice - 2 tsp
Pizza topping - 2-3 tbsp
Grated cheese - 1 cup
Salt to taste


  • Put the mashed potatoes in a bowl. Add salt and spice and mix well.
  • Then add 3/4th cup of water and 1 tsp of pizza topping  and mix gently.
  • Saute the beans in one tsp of oil for 2 - 3 minutes  and add to the potato mixture.
  • Spread the remaining pizza topping on the pizza base.
  • Spread the potato mixture on this and top with grated cheese.
  • Heat an oven to 180 C and bake the pizza in the oven for 10-12 minutes or until the cheese has melted.
  • Serve hot.

Tomato puree - 1 kg
Onion - 250 gms
Garlic - 50 gms
Salt and pepper to taste
Tomato ketchup - 100 gms
Acetic acid - 5 ml
Chilli sauce - 50 gms
Ginger - 25 gms
Corn flour - 1 tbsp
Water - 25 ml
Ajinomoto - as desired
Sugar to taste
Condiments & spices (optional)


  • Boil the tomatoes and blend to make puree.
  • Chop onion and garlic and grate ginger.
  • Boil tomato puree, onion, garlic, ginger till it becomes thick.
  • Add tomato ketch up, chilli sauce, salt and pepper and remaining ingredients.
  • Add corn flour mixed with water and boil the sauce till it acquires spreading consistency.
  •  It is advisable to prepare sauce one day in advance and refrigerate it so that it sets into a thick mass which will be convenient to spread. If it is desired to store sauce for longer period, sodium benzoate (1 gm per kg of sauce) mixed with little water may be added before adding corn flour.

Pitta breads - 4
Pasta sauce - 200 ml
Mozzarella sauce - 225 gms (sliced or grated)
Dried oregano or thyme 
Salt and pepper to taste

Extra toppings - choose from
Small red onion - 1 (thinly sliced and lightly fried)
Button mushrooms - 75 gms (sliced and fried)
Sweetcorn - 200 gms (drained)
Jalapeno chillies - 2 (sliced)
Black or green olives (stoned and sliced)
capers (drained)


  • Preheat two or three toppings of your choice for the pizzas.
  • Preheat the grill and lightly toast the pitta breads on both sides until golden.
  • Spread pasta sauce on each pitta , right to the edge. This prevents the edges of the pitta from burning when they are returned to the grill.
  • Arrange cheese slices or grated cheese on top of each pitta and sprinkle with dried oregano or thyme. Add salt and pepper to taste.
  • Add the toppings of your choice and then grill the pizzas for about 5-8 minutes until they are golden brown and bubbling.
  • serve he pitta pizzas immediately.

large loaf Italian bread - 1 (cut in half horizontally and crosswise)
(about 1/2 pound)
Prepared marinara spaghetti sauce - 1/2 cup
Shredded mozzarella cheese - 200 gms
Pepperoni - 16 slices
Roasted red peppers - 1/4 cup (drained, cut into strips)
Oil cured black olives - 8 (halved and pitted)
Parmesan cheese - 2 tbsp 
Olive oil - 1 tsp
Leaf oregano - 1/2 tsp (crumbled)


  • place the bread on a broiler rack. Broil the bread 4" from the source of the heat for 2 minutes on each side or until the bread is crisp.
  • Spread the cut sides of the bread with marinara sauce. Sprinkle the bread with the mozzarella cheese and top with the pepperoni, red peppers, olives, parmesan cheese,oil and oregano, dividing the ingredients equally among the bread slices.
  • Broil the pizzas for 2 minutes or until the cheese is melted and bubbly.

Pizza base - 1
Mushrooms - 50 gms
Butter - 50 gms
Cheese - 50 gms
Salt and pepper to taste


  • Take the pizza base and spread butter evenly on it.
  • Top up with sliced mushrooms, salt and pepper and sprinkle grated cheese over it.
  • Grill for 10 minutes and serve hot.

Yeast pizza dough - 1
Ricotta (or) Curd cheese - 225 g
Parmesan cheese - 2 tbsp (grated)
Egg - 1 (beaten)
Ham - 50 g (cooked and diced)


  • Roll out the dough on a floured surface to one large or two smaller rounds about 1 cm/1/2 inch thick. Transfer to a greased baking sheet and push up the edges of the round(s) to make a rim.
  • Beat together the cheeses with the egg, then mix in the ham and season to taste with salt and pepper. 
  • Spread the cheese mixture over the dough. Leave to rise in a warm place for 10 to 15 minutes.
  • Cook in a preheated moderately hot oven (200 C/400 F, Gas Mark 6) for 30 to 35 minutes.

Whole wheat pita breads - 4
Zucchini - 2 cups (sliced)
Black olives - 1 cup (sliced)
Green pepper - 1 cup (chopped)
Mozzarella cheese - 1 1/2 cups
Monterrey jack cheese - 1 1/2 cups
Tomato sauce

For Tomato sauce:
Tomato puree - 1 1/2 cups
Water - 1/4 cup
Olive oi - 2 tbsp
Asafoetida -  1/4 tsp
Sweet basil - 1 tsp
Salt - 1 tsp
Oregano - 1 tsp


For tomato sauce:

  • In a saucepan heat olive oil over medium heat. Add asafoetida and basir, and stir in puree, water and salt. Cover and bring to a boil, reduce heat, and simmer for 15 minutes, stirring occasionally. Remove from heat and stir in oregano.

  • Place 2 pita breads o baking sheet. Spread each with  1/4 of tomato sauce. 
  • Top with vegetables and cheese.
  • Sprinkle with oregano.
  • Bake 15 minutes or until the cheese begins to bubble ad brown.
  • Repeat with remaining pita breads.

Pizza base - 2
Mushrooms - 100 gms
Tomato - 1
Capsicum - 1
Tomato sauce - 2 tbsp
Butter - 1 tbsp
Onion - 1 large 
Oil - 1 tsp
Salt and pepper to taste
Cheese - 1/2 cup (grated)


  • Cut mushrooms into thin slices. Heat oil and cook onion and mushroom with salt and pepper they are soft and dry.
  • Butter the pizza base, then spread tomato sauce.
  • Put over it with mushroom mixture.
  • Put tomato rounds and capsicum over it.
  • Sprinkle cheese on top and bake in the hot oven till cheese melts.
