HOMEMADE TARTARE SAUCE

Ingredients:
Mayonnaise - 1 cup
Light cream - 2 tbsp
Shallot - 1 (finely chopped)
Parsley  - 1 tsp
Tarragon - 1 tsp (chopped)
Dry mustard - 1 tsp
Pinch of sugar
Salt and pepper
Dash of paprika
lemon juice to taste

Method:
  • Place all the ingredients in a bowl and mix together until well incorporated.
  • Season to taste and serve sauce with fried fish.

FISH SAUCE OR GRAVY

Ingredients:
Butter - 2 tbsp
Flour - 2 tbsp
Milk - 1 1/2 cups (scalded)
Basic fish stock - 1/2 cup
Lemon juice - 2 tbsp
Egg yolk - 1

Method:

  • Melt butter; gradually add flour and heated milk.
  • Add fish stock and lemon juice just before removing from heat.
  • Just before serving, beat sauce into egg yolk.
  • One tablespoon catsup can be added, if desired.
  • Bottled clam broth can be used as a substitute for fish stock in most dishes.

GLOUCESTER SAUCE

Ingredients:
Yogurt - 1/2 cup
Mayonnaise - 1/2 cup
Salt and pepper to taste
Sugar - 1/2 tsp
Lemon juice - 1 tsp
Dash of Worcestershire sauce

Method:


  • Place all ingredients in processor bowl and process with metal blade until smooth.
  • Garnish with a little grated lemon rind.
  • Serve with meat, fish,poultry, or beef fondue.

MAYONNAISE

Ingredients:
Dry mustard - 1 tsp
Salt - 1 tsp
Paprika - 1/2 tsp
Egg yolks - 2
Salad oil - 250 ml
Vinegar - 30 ml

Method:

  • In a small but deep bowl, mix spices, eggs and half of the vinegar.
  • Add oil one drop at a time, beating constantly; when about 1/3 of the oil has been added, the mixture will begin to thicken indicating that an emulsion has formed.
  • Beat in remaining vinegar and oil in larger portions.
  • Keep in a covered jar in the refrigerator. do not freeze.

SOY CHILLI SAUCE

Ingredients:
Garlic - 1 small clove
Salt -pinch
Sugar - 1/2 tsp
Soy sauce - 3 tbsp
Sesame or peanut oil - 2 tsp
Water - 2 tbsp
Mirin or dry sherry - 2 tbsp
Minced chilli or chilli sauce - 1/2 tsp
Ginger - 1/2 tsp (grated)

Method:

  • Crush garlic with salt and sugar in a small bowl.
  • Mix in remaining ingredients.
  • Use sauce cold or warmed in a saucepan or microwave.
Variations:
  • If using a sweet chilli sauce, leave out the sugar.
  • Add one tablespoon each chopped scallions and toasted sesame seeds.
Serving with:
  • Broiled or grilled kebabs, chicken pieces, and fish can be dipped into this sauce.
  • Splash the sauce onto a bowl of noodles or fried rice.

HORSERADISH SAUCE

Ingredients:
horseradish - 4 tbsp
Sour cream - 2 tbsp
Breadcrumbs - 1 tbsp
Whipped heavy cream - 75 ml
Few drops Tabasco sauce
Fresh ground pepper

Method:

  • Mix horseradish, sour cream and bread crumbs together.
  • Add remaining ingredients and season generously.
  • Serve with boiled beef.

MEAT SAUCE FOR SPAGHETTI

Ingredients:
Olive oil - 2 tbsp
Onion - 1 (chopped)
Carrot - 1 (diced)
Celery stalk - 1 (diced small)
garlic cloves - 3 (chopped)
Lean ground pork - 250 gms
Ground beef - 250 gms
Sausage meat - 125 gms
Crushed chillies - 1/4 tsp
Thyme- 1/2 tsp
Oregano - 1/2 tsp
Chilli powder - 1/4 tsp
Sugar - 1/4 tsp
Bay leaf - 1
dry white wine chardonnay - 1 cup
Tomatoes - 2 cans (800 gms) , drianed and chopped
Tomato paste - 160 gms
Salt and pepper

Method:

  • Heat oil in deep skillet. Add onion, carrot, celery and garlic; cover and cook 3 minutes over medium heat.
  • Add pork, beef and sausage meat, mix well and continue cooking 4 minutes. Do not cover.
  • Add seasonings, sugar and wine; cook 3 minutes over high heat.
  • Stir in tomatoes, tomato paste and correct seasoning; bring to boil.
  • Cook sauce partially covered about one hour over low heat; stir occasionally.
  • Serve this sauce with spaghetti or use it in a variety of pasta dishes as it is versatile.

CRANBERRY SAUCE

Ingredients:
cranberries - 300 gms
Sugar - 75 gms
Water -  2 tbsp
Port or sherry - 1 tbsp (optional)

Method:

  • Heat water and sugar together.
  • Add the fruit and cook until tender.
  • Add port or sherry if wished.

MAIONESE TONNATA (TUNNY FISH MAYONNAISE)

Ingredients:
Tunny fish - 50 gms (one can)
Mayonnaise
pepper

Method:

  • Press the tunny fish through a sieve and little by little add to a mayonnaise.
  • Check the seasoning adding a little pepper, additional lemon juice and salt if required.

MEX-OCADO SAUCE

Ingredients:
Ripe Avocados - 2
Onion - 1 tbsp (grated)
Lemon juice - 1 tbsp
Salt - 1 tsp
Chilli powder - 1/4 tsp
Mayonnaise  or salad dressing - 1/3 cup

Method:
  • Halve avocados and remove seeds; peel.
  • Mash with a fork. Add onion, lemon juice, salt, and chilli powder.
  • Spread mayonnaise over mixture sealing to edges of bowl; chilli.
  • At serving time, blend in mayonnaise.

ALLEMANDE SAUCE

Ingredients:
Butter - 2 tbsp
All purposes flour - 2 tbsp
Chicken broth - 1 cup
Salt - 1/4 tsp
Dash of white pepper
Light cream - 1/3 cup
Egg yolk -1 beaten
Lemon juice - 1 tbsp
Dash ground nutmeg

Method:

  • Melt butter in a saucepan; blend in flour.
  • Add broth, salt and white pepper.
  • Cook and stir till thickened; add cream.
  • Gradually stir about 1/2 cup of hot mixture into egg yolk; return to hot mixture.
  • Cook and stir over low heat till thickened; remove from heat.
  • Add lemon juice and nutmeg.
  • Serve hot with fish, salmon, or asparagus.

BREAD SAUCE

Ingredients:
Bread crumbs - 50 gms
Milk - 1/2 pint
Cloves - 2-3
Small onion - 1
Butter - 25-50 gms
Salt and pepper

Method:
  • Peel the onion and stick cloves firmly into the onion.
  • Put this into the milk together with the other ingredients.
  • Slowly bring the milk to the boil.
  • Remove from heat and stand in a warm place for as long as possible.
  • Just before the meal is ready, remove the onion, heat the sauce gently, beating with a wooden spoon.
  • Serve in a sauce boat.

HOW TO MAKE PIZZA SAUCE

Ingredients:
Tomato puree - 1 kg
Onion - 250 gms
Garlic - 50 gms
Salt and pepper to taste
Tomato ketchup - 100 gms
Acetic acid - 5 ml
Chilli sauce - 50 gms
Ginger - 25 gms
Corn flour - 1 tbsp
Water - 25 ml
Ajinomoto - as desired
Sugar to taste
Condiments & spices (optional)

Method:

  • Boil the tomatoes and blend to make puree.
  • Chop onion and garlic and grate ginger.
  • Boil tomato puree, onion, garlic, ginger till it becomes thick.
  • Add tomato ketch up, chilli sauce, salt and pepper and remaining ingredients.
  • Add corn flour mixed with water and boil the sauce till it acquires spreading consistency.
Note:
  •  It is advisable to prepare sauce one day in advance and refrigerate it so that it sets into a thick mass which will be convenient to spread. If it is desired to store sauce for longer period, sodium benzoate (1 gm per kg of sauce) mixed with little water may be added before adding corn flour.

MINT SPARKLE SAUCE

Ingredients:
Sugar - 1/2 cup
Cornstarch - 3 tbsp
Syrups from canned pineapple chunks and pears
Lemon rind - 1 tsp
Lemon juice - 2 tbsp

Method:

  • Blend sugar and cornstarch in a medium size saucepan; stir in fruit syrups (there should be about 2 1/2 cups).
  • Cook over medium heat, stirring constantly, until mixture thickens slightly and boils three minutes; remove from heat.
  • Stir in lemon rind and lemon juice.
  • Serve warm or cold.

PAPRIKA SAUCE

Ingredients:
Onions - 1 cup (chopped)
Butter - 2 tbsp
paprika - 2 tbsp
Dry white wine - 1/2 cup
Hot white sauce - 1 1/2 cups
Tabasco sauce - few drops
Salt - pinch
Few drops of lemon juice

Method:

  • Place onions in a small saucepan and pour in water to cover.
  • Bring to boil and continue cooking 2 minutes; drain and set aside.
  • Heat butter in saucepan. Cook drained onion and paprika 5-6 minuted over low heat.
  • Pour in wine; cook 5 minutes over high heat to reduce liquid by 2/3.
  • Mix in white sauce and remaining ingredients; cook 6-7 minutes over low heat.
  • Serve sauce with kebabs.

BLUEBERRY SAUCE

Ingredients:
Fresh blueberries - 375 gms
Orange juice - 250 ml
Water - 375 ml
Sugar - 125 gms
Cornstarch - 50 gms
Sprinkle of cinnamon
Few drops of almond flavour

Method:

  • Combine the cleaned berries and orange juice, bring to boiling point.
  • Blend cornstarch, sugar and water; stir into the berries and cook until there is no flavour of raw starch.
  • Remove from heat, add flavouring.
Serve over pancakes, ice creams or milk puddings.

BON-BON CHICKEN WITH SESAME SAUCE

Ingredients:

Chicken - 1/2 kg
Water  - 5 cups
Sesame oil - 1 tbsp
Shredded cucumber, to garnish

For the sauce:
Light soy sauce - 2 tbsp
Sugar - 1 tsp
Spring onions - 1 tbsp (finely chopped)
Red chilli oil - 1 tsp
Ground Szechuan peppercorns - 1/2 tsp
White sesame seeds - 1tsp
Sesame paste - 2 tbsp or 
Peanut butter creamed with a little sesame oil

Method:

  • Clean the chicken well. Bring the water to a rolling boil in a wok, add the chicken.
  • Reduce the heat, cover and cook for 40-45 minutes.
  • Remove the chicken and immerse in cold water to cool.
  • After at least one hour, remove the chicken and drain; dry well with kitchen paper and brush on a coating of sesame oil.
  • carve the meat off the legs, wings and breast and pull the meat off the rest of the bones.
  • On flat surface, pound the meat with a rolling pin, then tear the meat into shreds with your fingers.
  • Place the meat in a dish with the shredded cucumber around the edge.
  • In a bowl, mix together all the sauce ingredients, keeping a few spring onions to garnish.
  • Pour the sauce over the chicken and serve.

PICCHI PACCHI

Ingredients:
Olive oil- 1/3 cup
Onion- 1
Garlic- 1(crushed)
Anchovy fillets- 4(drained and soaked in milk for 45 minutes)
Canned Italian tomatoes- 1 2/3 cups(drained and chopped)
Basil- 1
Salt and Ground black pepper

Method:
  • In a large pan heat oil ans saute onion and garlic until soft.
  • Add drained anchovies and cook for 1-2 minutes, breaking them up with the spoon as you stir.
  • Add tomatoes and basil, season lightly and simmer, covered, for 20 minutes or so, until smooth and thick.
  • Adjust seasoning. No grated cheese is served with this sauce.
Note:
Picchi- Pacchi is a rich, full-flavored sauce that can be served on most types of pasta, but coming from Sicily it is more often than not appears on spaghetti.There is a version that include fried eggplant, and another has black olives thrown in for the last 5 minutes of cooking.

SWEET AND SOUR SAUCE

Ingredients:
Sugar - 6 tbsp
Vinegar -4 tbsp
Soy sauce - 1 tbsp
Five spice powder - 1 tsp
Gourmet powder - 1/2 tsp
 Dry chilli powder - 1 tsp
Sherry or cooking wine 0 1 tbsp
Black pepper powder - 1/2 tsp
Salt - 2 tsp
Tomato sauce - 8 tbsp
Water - 1 1/2 cups
Corn flour - 2 tbsp + 5 tbsp water mix together
Sesame oil - 3 tbsp

Method:

  • Mix all the ingredients except cornflour mixture. Put in a pan over medium heat and bring to a boil.
  • Add cornflour mixture. Stir well and cook until thickened.
  • Remove from fire and use.

SALSA DI PROSCIUTTO (HAM AND BUTTER SAUCE)


Ingredients:
Prosciutto - 4 oz sliced
(Italian raw ham)
Olive oil - 1 tbsp
Unsalted butter - 50 gms

Method:

  • Cut the ham into 1/4" squares.
  • Heat the oil and the butter in a saucepan, add the prosciutto and over gentle heat cook for 4-5 minutes, stirring now and then.
  • The ham should not brown.
  • Pour this delicious sauce over hot pasta or boiled rice, stir and sprinkle generously with grated Parmesan cheese.
