Corn on the cob - 8 (corn removed from cob and set aside)
Lamb - 200 gms (minced)
Onion - 1 (finely chopped)
Red pepper -1 (finely chopped)
Tomatoes - 2 (peeled)
Sugar - 1tsp
Paprika - 1 tsp
Lard - 2 tbsp
Vegetable stock - 2 cups
Salt to taste


  • Melt the lard in a frying pan and add the finely chopped onion, tomatoes and pepper.
  • Now add the lamb and cook until browned then add the sweet corn, sugar and 2 cups of vegetable stock.
  • leave to cook until the sweetcorn  is tender.
  • Now blend the mixture into a chunky but well mixed paste.
  • Spoon onto the corn leaves and wrap into small parcels.Simmer for about 15 minutes in a saucepan.Serve hot.

Flour - 225 gms 
Baking powder - 2 tsp
Salt -  a pinch
Margarine - 25 gms
Egg - 1
Milk - 4-5 tbsp
Oil for deep frying

For Syrup:
Granulated sugar - 500 gms
Water - 284 ml
Cinnamon - 1 stick


  • Put ingredients for the syrup into a small pan and stir over the heat until sugar dissolves. Bring to the boil and boil rapidly for one minute. Leave to cool.
  • Sieve the flour, baking powder and salt. Rub in margarine.
  • Add the egg and enough milk to form a dough. 
  • Roll out to a rectangle about 1/2 cm in thickness and from this cut strips 7 1/2 cm by 2 1/2 cm.
  • Cut each strip into 3 lengthways, not completely cutting through to the end, and plait, pinching together at the end.
  • Fry few at a time in the hot oi until golden brown. 
  • Drain on absorbent paper then dip at once into cold syrup; cool on a wire tray.
