TROPICAL SUPERWHIP

Ingredients:
Avocado-1
Banana-1
Pawpaw- 1/4 cup
Honey- 2 tsp
Desiccated coconut- 2 tsp
Mint leaves- 6
Orange juice or milk- 600ml

Method:

  • Blend all the ingredients and serve in very tall glasses, with a slice of kiwi fruit on the slide of the glass.
  • Decorate with a cocktail umbrella.
  • Serves 4

SUMMER PUDDING

Ingredients:
Mixed soft fruits- 750 gms
(strawberries, raspberries, etc)
Castor sugar - 75 gms
Water - 3 tbsp
Small loaf of white bread - 1 (sliced and crust removed)

Method:

  • Place the fruit, sugar and water in a saucepan and cook gently until the fruits are soft. Remove from the heat and cool.
  • Cut the slices of bread in half diagonally.
  • Arrange about 2/3 of the bread over the bottom and sides of a greased 900 ml pudding basin.
  • Pour in the fruit mixture, reserving 2 tablespoons of the juice.
  • Place the remaining bread on top.
  • Place a saucer on top of the bread and put a heavy weight on top. Refrigerate overnight.
  • The next day, turn out the pudding onto a serving dish.
  • Drizzle the reserved juice over any parts that are still white.
  • Serve with whipped cream or ice cream.

LEMON CARDAMOM ICE

Ingredients:
Lemons - 6
Cardamom powder - 1 tsp
Sugar - 400 gms

Method:

  • Squeeze the lemons to get 235 ml lemon juice.
  • Put the cardamom, sugar and 235 ml water in a one litre pot and heat over medium flame to a simmer, stirring occasionally until the sugar has dissolved. Cool and stir in lemon juice
  • Pour into a loaf pan and freeze at least 8 hours.
  • Scrap off with a spoon and serve in chilled glass bowls.
  • The ice will be grainy, not smooth.

SHIKANJVI

Ingredients:
Lemons - 2 - 3
Water - 1 litre
Sugar - 3 tbsp
Black salt - little
Pepper/ roasted cumin powder - a pinch

Method:

  • Stir sugar in water till it is dissolved.
  • Squeeze juice from lemons and stir in sugar water.
  • Add black salt, pepper or roasted cumin powder.
  • Serve chilled with crushed ice cubes.

SATTU PANI

Ingredients:
Sattu (roasted channa dal powder) - 1 1/2 tbsp  
Cumin powder -1/2 tsp
Lime - 1/2
Red chilli powder - 1/4 tsp
Black pepper powder- 1/2 tsp
Black salt - 1/4 tsp
Water - 1 1/2 cups

Method:

  • Squeeze out the juice from the lemon; about 1/2 tbsp
  • Put all the ingredients into the blender and blend for one minute.
  • Chill and pour into the glass over ice cubes.

BUTTERMILK WITH CORIANDER LEAVES

Ingredients:
Curd - 250 ml
Coriander leaves -  2 tbsp (chopped)
Salt to taste
Water - 750 ml
Ice cubes 

Method:

  • Blend curd with salt and water.
  • Transfer to glasses and top up with coriander leaves and crushed ice.
  • Serve immediately.

SUMMER TUNA SALAD

Ingredients:
Radishes-175 gms
Cucumber-1
Celery sticks-3
Yellow pepper-1
Cherry tomatoes-175 gms
Spring onions- 4
Fresh lemon juice-45 ml
Olive oil-45 tbsp
Tuna cans-2×200 gms
Fresh parsley-2 tbsp
Black pepper
Salt

Method:
  • Cut the radishes,cucumber,celery and yellow pepper into small cubes.Place in a large,shallow dish with the cherry tomatoes and spring onions.
  • Put the lemon juice in a bowl.Whisk in the oil,with salt and pepper to taste
  • Add dressing to the vegetables,toss to coat,then set aside for 15 minutes.
  • Add the flaked tuna and parsley to the mixture and toss gently until well combined.
  • Arrange the lettuce leaves on a platter and spoon the salad into the center.Garnish with the twisted lemon rind.

SUMMER DRINK WITH SABZA SEEDS

Ingredients:
Sabja seeds - 1/4 cup
Cold milk - 2-3 cups
Sugar to taste
Kewra water to taste
Water - 10 cups

Method:

  • Soak seeds in half of the water for one hour til they swell up.
  • Heat the remaining water; add sugar to dissolve.
  • Let it cool.
  • When the seeds have swollen up,add sugar water. Refrigerate.
  • To serve add cold milk and kewra essence.

SUMMER RASPBERRY PUDDING

Ingredients:
Bread slices - 5 thin large slices
Raspberries - 1 medium size can

Method:

  • Cut the crusts off the bread, cut into fingers with line bottom and sides of a pudding basin with this.
  • Drain syrup from fruit and put fruit into the basin.
  • Cover with the rest of the bread.
  • Put a layer of greaseproof paper on top and a weight and leave overnight.
  • Turnout and serve syrup from canned raspberries as a sauce.
  • Serve.

SUMMER TOMATO JUICE COCKTAIL

Ingredients:
Tomato juice - 250 ml
Tabasco sauce - few drops
Lemon juice -  little
Worcestershire sauce to taste

Method:

  • Chill tomato juice.
  • Put into a jug with a few drops of tabasco sauce, a little lemon juice and worcestershire sauce, adjusting to taste. Stir well.
  • Pour into small glasses and garnish with fresh mint sprigs.

BUTTERMILK (SUMMER DRINK)

Ingredients:
Buttermilk - 3 cups
Ginger - 1" piece
Coriander leaves - few
Salt  - 1 tsp
Green chilli - 1
Mustard seeds - 1/8 tsp
Curry leaves - few
Oil - 2 tsp

Method:

  • Crush ginger, coriander leaves and the green chilli and add to the buttermilk.
  • Let it soak in the buttermilk for 10 minutes.
  • Heat oil in small pan, add mustard and curry leaves. Allow them to crackle.
  • Add this to the buttermilk. Add salt.
  • Strain and serve in individual glasses.

ORANGE ICECREAM

Ingredients:
Sugar-100 grams
Milk maid-1\2 cup
Milk-1 cup
Orange juice-2 cups
Marmalade-2 tablespoon
Cream-1\2 cup
Eggs whites-2
Small pieces of orange

Method:
  • Mix sugar and marmalade and keep aside for 15 minutes.
  • Whip milkmaid and cream again.
  • Add marmalade and orange juice and beat well.
  • Beats the egg whites thoroughly.
  • Add it to the mixture and put in the freezer.
  • When firm,make 4 portions, arrange pieces and serve.

MANGO PANNA (RAW MANGO DRINK)

                                    ఆమ్ పన్నా 

కావలిసిన వస్తువులు:
పచ్చి మామిడి కయ - 1
మిరియాలు - కొద్దిగా
బ్లాకు సాల్ట్
ఉప్పు - చిటికెడు
పంచదార -  1 tsp
పొదిన - గుప్పెడు
పచ్చి మిర్చి - 1-2
నీళ్ళు - 5 glasses

తయారీ:

  • మామిడికాయను శుబ్రముగా కడిగి ప్రెషర్ కుక్కర్లో మెత్తగా ఉడికించాలి. దానిని బయటకి తీసి చల్లారనివ్వాలి. 
  • మామిడి కాయ తోలు, గింజ తీసి, ఆ గుజ్జు, పుదినా, పచ్చి మిర్చి కలిపి మెత్తగా రుబ్బుకోవాలి. 
  • దీనికి 5 గ్లాసు ల నీళ్ళు , బ్లాకు సాల్ట్, ఉప్పు, మిరియాల పొడి, పంచదార వేసి బాగా కలుపుకోవాలి. 
  • ఈ డ్రింక్ ని చల్లగా సర్వ్ చెయ్యాలి

BLACK GRAPE MOCKTAIL

Ingredients:
Black grape juice- 300 ml
Soda water – 200 ml
Pineapple pieces – few (cut finely)
Orange segments (cut into small pieces)
Crushed ice
For garnishing:
  1. Some mint leaves

Method:
  • Place the crushed in a tall glass. Add the grape juice.
  • Add fruit pieces and the soda water.
  • Garnish with mint leaves.

FIZZ CREAM

Ingredients:
Gin - 40 ml
Lemon juice - 25 ml
Vanilla extract -1/2 tsp
Light cream - 40 ml
Sugar - 3 tsp

Method:

  • Place all the ingredients in a blender and add crushed ice.
  • Blend until smooth. Serve in a tall glass garnished with an orange slice.

NAMKEEN LASSI

Ingredients:
Curd- 500 gms
Water- 500 ml
Salt to taste 
Roasted cumin power- 5 gms

Method:

  • Bend curd, water, salt and cumin power in an electric blender.
  • Remove into a jar.Serve lassi in a big glass.Add crushed ice.
  • Serve chilled.

SWEET LASSI

Ingredients:
Thick curd- 800 gms
Water- 600 ml
Sugar- 200 gms
Cardamom power- 5 gms
Thick malai- 30 gms
Sugar- 30 gms
Green cardamom- 1 gms

Method:

  • Blend curd, water, sugar and cardamom power in an electric blender.
  • Churn the lassi for 2 min. Add crushed ice.
  • Sprinkle little green cardamom power on top.
  • Serve cold.

DANISH CUSTARD

Ingredients:
Apples- 2
Eggs- 3
Vanilla essence- 2 drops
Milk- 1 litre
Sugar- 3 tbsp
Rice flour- 1 tsp
Golden syrup- 1 tsp
Custard- 6 tsp
Powdered nuts- 10 gms

For garnishing:
Nuts
Apple strips

Method:

  • Beat the eggs well and boil the milk. When milk boils, add sugar and stir.
  • Remove from fire and add the beaten eggs when the milk becomes lukewarm.Keep on stirring till it is mixed well.
  • Now add custard power to 3 tsp of warm water and add to the lukewarm milk.Steam it for 30 min.
  • Allow to cool to normal temperature and spread in a dish. Spread strawberry jam like a frill on it and keep in the fridge for half an hour.
  • Dip the thin strips of apple in golden syrup.
  • Take out the custard from the fridge and decorate it with overlapping  strips of apple.
  • Put back into the fridge and serve cold after lunch or dinner.
  • It comes for 6 persons and takes the time of 30 min.

SUMMER FRUITS PUDDINGS

Ingredients:
Mango pulp- 1 cup
Sapota pulp- 1/2 cup
Orange juice- 1 cup
Gelatine- 2 tsp

For garnishing:
Fruits

Method:

  • To obtain the pulp of the orange- peel the mango, cut the flesh into pieces and run in the mixy with sugar and blend to obtain the pulp.
  • For sapota pulp- peel the fruit, remove the seeds, cut into pieces and blend in a mixer and obtain the pulp.
  • Mix the mango pulp, sapota pulp and orange juice.
  • Soak the gelatine in 3 tsp of warm water and leave aside for 5-6 mins.
  • Mix the gelatine mixture into the fruit puree mixture and blend again so that the gelatine gets mixed into the fruit pulp.
  • Pour into a container and chill in the fridge.
  • Allow the pudding to set.
  • Decorate with fruits and serve chilled.



LOW FAT MANGO DRINK

Ingredients:
Unsweetened mango juice- 1 cup
Skimmed milk- 1 cup
Orange juice- 1/2 cup
Honey- 1 tbsp

For garnishing:
A few sprigs of mint leaves

Method:

  • Blend together all the ingredients in a blender till they become smooth and creamy.
  • Add crushed ice if desired.
  • Garnish with mint leaves.
  • This drink has negligible fat.
