CREAMED SWEETCORN WITH PEPPERS

Ingredients:
Butter -30 gms
Small onions - 2 (thinly sliced)
Small green pepper - 1 (cut into strips)
Corn on the cob - 4 (husked)
Dried oregano - 1/4 tsp
Half cream - 60 ml
Small tomato - 1 (cut into thin wedges)
Salt - 1 tsp
Pepper to taste

Method:

  • In 30 * 20 cm microwave safe baking dish, place butter. Heat covered with kitchen paper, on high until melted.
  • To melted butter, add onions and green pepper; stir to cook. Cook on high for 4-5 minutes, until onions are softened, stirring once.
  • Meanwhile, with sharp knife cut kernels from cobs.
  • Into onion mixture, stir oregano, sweet corn and cream.
  • Cook, covered, on high for 5-7 minutes, until sweet corn is tender, stirring twice.
  • Add tomato. Cook on high for 1-2 minutes, until tomato is hot but still firm.
  • Season.

TAMALES JUJENOS (CORN LEAVES STUFFED WITH MEAT)

Ingredients:
Corn on the cob - 8 (corn removed from cob and set aside)
Lamb - 200 gms (minced)
Onion - 1 (finely chopped)
Red pepper -1 (finely chopped)
Tomatoes - 2 (peeled)
Sugar - 1tsp
Paprika - 1 tsp
Lard - 2 tbsp
Vegetable stock - 2 cups
Salt to taste

Method:

  • Melt the lard in a frying pan and add the finely chopped onion, tomatoes and pepper.
  • Now add the lamb and cook until browned then add the sweet corn, sugar and 2 cups of vegetable stock.
  • leave to cook until the sweetcorn  is tender.
  • Now blend the mixture into a chunky but well mixed paste.
  • Spoon onto the corn leaves and wrap into small parcels.Simmer for about 15 minutes in a saucepan.Serve hot.

PRAWN AND VEGETABLE BALTI

Ingredients:
Prawns - 175 gms (cooked and peeled)
Corn oil - 2 tbsp
Onion seeds - 1/4 tsp
Curry leaves - 4-6
Frozen peas - 115 gms
Frozen sweetcorn -115 gms
Large courgette - 1 (sliced)
Red pepper - 1 (seeded and roughly diced)
Coriander seeds - 1 tsp (crushed)
Dried red chillies - 1 tsp (crushed)
Lemon juice - 1 tbsp
Salt
Fresh coriander leaves - 1 tbsp 

Method:

  • Drain any excess liquid from the prawns and apt them dry on kitchen paper.
  • Heat the oil with the onion seeds and curry leaves in a non stick wok or frying pan.
  • Add the prawns to the wok or frying pan and stir fry until any liquid has evaporated.
  • Add the peas, sweetcorn, courgette and red pepper and stir fry for 3-5 minutes more.
  • Add the coriander seeds, dried red chillies and lemon juice.
  • Toss over the heat for one minute, season to taste and serve, garnished with the fresh coriander leaves.

SWEETCORN AND BUTTERED FRIED EGGS

Ingredients:
Butter - 70 gms
Flour  - 1 tbsp
Milk - 115 ml
Sweetcorn - 1 can
Grated cheese - 100 gms
Eggs - 8
Salt and pepper to taste

Method:

  • Melt 1 tbsp butter and stir in the flour. Cook for one minute over a low heat and stir in the milk.
  • Bring to the boil and cook gently for 2 minutes.
  • Add the cooked sweetcorn and cheese to the sauce and keep hot, season well.
  • Fry the eggs in remaining butter.
  • To serve, place the sweetcorn mixture in the bottom of a hot dish, the fried eggs on top, and serve with jacket potatoes.
