Ingredients:
Cooked Rice - 2 cups
Boneless chicken pieces - 1 cup
Coconut Milk - 1 cup (thick)
Capsicum - 1/2 cup (julienned)
Carrots - 1/2 cup (shredded)
Spring onion - 1/2 cup (chopped)
Ginger garlic paste - 1 tbsp
Red chilli paste - 1 tsp
Salt to taste
Oil -1/2 cup
Method:
Cooked Rice - 2 cups

Method:
- Soak red chillies in hot water and grind to make paste.
- Heat oil in kadai, add chicken, carrot,capsicum, spring onion and ginger garlic paste and stir fry till chicken is cooked.
- Add red chilli paste, salt and coconut milk and mix well
- Add cooked rice and stir fry for few minutes.
- Serve hot with spring onion garnished.
