Lamb Pilaf

Ingredients:
Cooked lamb - 350 gm(diced)
Rice- 225 gm
Onion - 1, thinly sliced
Raisins - 50 gm
Water or stock - 1.25 litres
Mint - 2 tsp, chopped
Salt to taste
Pepper - 1/2 tsp
Almonds - 40 gms(slivered)
Oil- 2 tbsp

Method:

  • Heat oil in a large sauce pan, add onion and fry till golden.
  • Stir in lamb, rice, raisins, stock, mint, salt and pepper.
  • Bring to the boil, lower the heat, cover and simmer for 25 minutes.
  • Sprinkle with almonds and serve hot.
