Ingredients:
Potatoes - 250 gms
Eggs - 2
Salt to taste
Turmeric - 1/4 tsp
Chilli powder - 1 tsp
Garlic - 1 tsp (crushed)
Mustard seeds - 1/4 tsp
Cumin seeds - 1/4 tsp
Curry leaves - few
Oil - 2 tbsp
Coriander leaves - 1 tbsp(chopped)
Method:
Potatoes - 250 gms

Oil - 2 tbsp
Coriander leaves - 1 tbsp(chopped)
Method:
- Wash, peel and cut potatoes into small pieces.
- Heat oil in kadai, add cumin, mustard and curry leaves. Fry till mustard crackles.
- Add garlic paste and potato pieces. Fry them till they are tender, add salt, turmeric and chilli powder.
- Mix well.Beat eggs with little salt and chilli powder.
- Pour this over potato mixture and mix gently.
- Cook in low flame until done. Stir; lastly garnish with coriander leaves.
