CARROT NUT CAKE

Ingredients:
Butter - 100 gms
Castor sugar - 175 gm
Ground cinnamon - 1 tsp
Grated orange rind -1 tsp
Eggs - 2
Self raising flour -225 gm
Salt - a pinch
Carrots -75 gms (grated)
Walnuts - 50 gms (chopped)
Orange juice - 1 tbsp

Method:

  • Beat the butter with the sugar until light and fluffy.
  • Beat in the cinnamon, orange rind and eggs.
  • Sift the flour and salt into the bowl and mix in well.
  • Fold in the carrots, walnuts and orange juice.
  • Pour into a greased and lined round deep cake pan.
  • Bake in a preheated oven (160 C) for 45-55 minutes or until the cake springs back when lightly pressed in the centre.
  • Cool on a wire rack.
