AVOCADO SULTANA MUFFINS

Ingredients:
Wholemeal plain flour - 1 1/2 cups
Baking powder - 2 tsp
Mixed spice - 1/4 tsp
Sugar - 1/2 cup
Sultanas - 1/2 cup
Egg - 1
Vanilla essence - 1/4 tsp
Buttermilk - 1 cup
Soft butter - 80 gms
Avocado - 1 cup (mashed)

Method:

  • Sift flour with baking powder and mixed spice.
  • Add sugar and sultanas. Make a well in the centre.
  • Beat together egg, vanilla, buttermilk and soft butter and mashed avocado.
  • Pour in the centre of dry ingredients and mix enough just to blend in.
  • Spoon into greased muffin tins and bake at 190C for 20-25 minutes until golden brown.
  • Serve hot with butter and honey.
