Ingredients:
Butter -175 gms
Caster sugar - 175 gms
Eggs - 3
Plain flour - 100 gms
Corn flour -100 gms
Baking powder - 1 tsp
Vanilla essence- 1/2 tsp
Milk -2 tbsp
Almond flakes -25 gms
Method:
Butter -175 gms

Method:
- Beat the butter with the sugar until light and fluffy.
- Beat in the eggs one at a time, adding a spoonful of flour with each.
- Sift the remaining flour, corn flour and baking powder into the bowl.
- Add the vanilla and milk and mix well.
- Pour into greased and lined 1 kg loaf pan.
- Sprinkle the almonds over the top.
- Cook in a preheated mooderate oven, 180 C for 1 1/4 hours until firm to touch.
- Cool on a wire rack.
