Ingredients:
Cold cooked rice - 500 gms
Shallots - 3 (finely chopped)
Eggs - 3
Oil - 3 tbsp
Prawns - 90 gms (finely chopped)(boiled)
Bacon rashers - 3 (chopped)
Soy sauce - 1 tbsp
Salt and pepper to taste
Method:
Cold cooked rice - 500 gms
Shallots - 3 (finely chopped)

Oil - 3 tbsp

Soy sauce - 1 tbsp

Method:
- Heat oil in wok; add beaten eggs and stir fry until party set, add rice and stir fry, add bacon, prawns and continue stir frying.
- Add soy sauce, salt, pepper and shallots.
- A few drops of sesame oil may be added.
- Garnish with shallot fans.
Note: Eggs may be made into an omelette and cut into strips and add separately; if desired.
