Ingredients:
Butter - 1 tbsp
Bacon Rashers - 4 (finely chopped)
Ricotta cheese - 500 gms
Eggs - 2
Mozzarella cheese - 3/4 cup
Grated parmesan cheese - 1/4 cup
Method:
Butter - 1 tbsp
Bacon Rashers - 4 (finely chopped)

Method:
- Heat butter in a frying pan, add bacon and cook for 3 minutes.
- Combine bacon, ricotta, egg, mozzarella and parmesan cheese in a food processor.
- Spoon mixture into 8 greased muffin tins.
- Bake at 180 C for 30 minutes.
