DOSAKAYA CHINTAKAYA PACHADI

Ingredients:
Cucumber - 250 gms
Tender tamarind - 100 gms
Green chillies - 15 -20
Coconut - 1/4
Salt to taste
Turmeric - 1/4 tsp
Cumin seeds - 1/4 tsp
Garlic cloves - 4
Asafoetida - pinch
Oil - 1 tsp
Coriander leaves - 1 tbsp

For Talimpu:
Oil - 1 tbsp
Mustard, cumin, fenugreek seeds - 1/4 tsp
Channa dal - 1/4 tsp
Curry leaves - few

Method:

  • Peel and cut the cucumber into half, taste the seeds and small piece if it is bitter do not use,
  • Remove the seeds and keep aside. Cut the cucumber into small pieces.
  • Cut the tamarinds into small pieces.
  • heat 1 tsp of oil,, fry green chillies and asafoetida.
  • Grind the tamarind, green chillies, salt, turmeric, garlic, cumin, coconut and the seeds that keep aside to make chutney.
  • Lastly add cucumber pieces and grind once or twice to slightly crush the cucumber pieces.
  • Heat the oil; add all talimpu ingredients and allow to splutter it.
  • Pour this over chutney and garnish with coriander leaves.


దోసకాయ చింతకాయ పచ్చడి 

కావలిసిన వస్తువులు:
దోసకాయలు - 250 గ్రా 
లేత చింతకాయలు - 100 గ్రా 
పచ్చిమిర్చి - 15 -20
కొబ్బరి - 1/4
ఉప్పు 
పసుపు - 1/4 tsp 
వెల్లులి - 4
జీలకర్ర - 1/4 tsp 
కొత్తిమీర 
ఇంగువ - చిటికెడు 
నూనె - 1 tsp 

తాలింపు:
నూనె - 1 tbsp 
ఆవాలు, జీలకర్ర, మెంతులు - 1/4 tsp 
సెనగ పప్పు - 1/4 tsp 
కరివేపాకు 

తయారీ:
  • దోసకాయలు చెక్కు తీసి కోసి గింజలు, ముక్క చేదు చూసుకోవాలి. తరువాత గింజలు గుజ్జుతో సహా పక్కన పెట్టి చిన్న ముక్కలుగా కోసుకోవాలి. 
  • చింతకాయలు కడిగి ముక్కలు కోసుకోవాలి. 
  • నూనె వేడి చేసి పచ్చిమిర్చి, ఇంగువ వేయుంచుకోవాలి. 
  • దోసకాయ ముక్కలు తప్ప మిగిలిన అన్ని కలిపి రుబ్బుకోవాలి.  నలిగిన తరువాత దోసకాయ ముక్కలు వేసి కచ్చాపచ్చాగా రుబ్బుకోవాలి. 
  • నూనె వేడి చేసి తాలింపు దినుసులు వేసి వేగిన తరువాత పచ్చడిలో కలుపుకోవాలి. 
  • కొత్తిమీర జల్లి సర్వ్ చేసుకోవాలి.
