Ingredients:
Plain flour - 120 gms
Butter - 100 gms
Water - 300 ml
Eggs - 3
Baking powder - pinch
Filling:
Strong coffee - 125 ml
Egg yolks - 2
Cornflour - 1 tbsp
Sweetened condensed milk- 250 ml
Icing:
Icing sugar - 70 gms
Strong coffee - 20 ml
Method:
Plain flour - 120 gms

Icing sugar - 70 gms
Strong coffee - 20 ml
Method:
- Bring water and butter to the boil in heavy saucepan.
- Remove pan from heat and beat in flour mixed with baking powder, a little at a time.
- Return saucepan to heat and beat vigorously until mixture leaves bottom and sides of the pan.
- Remove pan from the heat and add the eggs, one at a time, while beating vigorously.
- Spoon out mixture onto baking paper or greased baking sheet with gaps and bake at middle of oven for 20 minutes at 225C.
- Do not open the oven door during baking. Allow the cakes to cool.
- Cut a slit almost right the way through each cake.
- Allow coffee, egg yolks and cornflour to simmer while beating until thickened.
- Allow to cool and mix in sweetened condensed milk.
- Fill pastries with coffee cream and spread over the icing made from icing sugar and strong coffee.
