FRIED RICE WITH GREEN LEAFY VEGETABLES

Ingredients:
Green leafy vegetables (Spinach, Amaranth, fengreek leaves, sorrel leaves, coriander, mint etc.,)- 500gms
Cooked rice - 500gms
Salt to taste
Green chillies -4
Red chilli powder - 1 tsp
Oil - 1 tbsp
Turmeric -1/2 tsp
Garlic paste - 1 tbsp
Cumin seeds


Method:


  • Clean and wash all leafy vegetables, chop and boil them in water
  • Cool and grind with chillies to make paste,
  • Heat the oil in big vessel, add cumin seeds and fry to little brown.
  • Add green paste, garlic paste and all spices, mix well
  • Cook until it becomes thick, add cooked rice and mix well.
  • Cook in low flame for 10 minutes and remove from fire.
  • Serve hot directly.
