BOTI KABABS

Ingredients:
Mutton - 500 gms boneless (cut into 1 1/2" squares and 1/2" thick)
Onion - 1 (sliced)
Curd - 1/2 cup
Coriander powder - 1 tsp
roasted gram powder - 1 tsp
Pepper powder - 1/2 tsp
Cumin powder - 1 tsp
Salt
Cloves - 2 (crushed)
Cardamom - 1 (crushed)
Pickle berry - 1/2 tsp (roasted and powdered)
Poppy seed paste - 1 tsp
Ginger paste - 2 tsp
Ghee - 2 tbsp
Lemon - 1 (sliced)

Method:

  • Wash the meat and drain well.
  • Mix all the spices with curd and rub into the meat and leave to marinate for at least one hour.
  • Take large iron skewers and put them through the meat.
  • Broil over an open fire, occasionally brushing with ghee.
  • Serve immediately with onion and lemon slices.
