Milk - 500 m
Corn flour - 1 tbsp
Limes - 2
Sugar - 2 tbsp


  • Put the corn flour into small bowl, add a little milk and stir till you have a smooth cream of pouring consistency.
  • Wash the limes and squeeze out the juice, about 2 tbsp
  • Bring the rest of the milk carefully to the boil. Remove from the heat, and slowly pour in the corn flour mixture, stirring all the time. It will start thickening immediately.
  • Return to the heat and bring slowly back to the boil, stirring all the time.
  • When it boils, take it off the heat and stir in the sugar.
  • Let it cool, stirring every now and then to prevent the formation of a skin. As it cools, it will thicken further.
  • When it is cool, stir in the lime juice.
  • Decant it into a serving bowl, and put into the fridge to chill.
