Fresh peaches – 4
Apple juice – 200 ml
Cassis – 1 tbsp
Fresh mint – 1 tbsp (chopped)
- Make a nick in the stalk end of each peach; scald with boiling water for 45 seconds to loosen the skins. Peel off carefully.
- Mix the apple juice with the cassis and chopped mint.
- Place the peaches in tall, stemmed glasses and pour the cassis flavored fruit juice.
