VEGETABLE STOCK

Ingredients:
Onions - 2 (finely chopped)
Spring onions - 8 (finely chopped)
Parsley and stalks - 1 cup (chopped)
Rosemary - 4 stems
Celery sticks and leaves-  3 (chopped)
Bay leaves - 3
Black peppercorns -10
Small red chilli - 1/2 (seeded and chopped)
Broccoli stems (optional)
Cabbage outer leaves (optional)
Cauliflower  stems (optional) 
Any of the the above optional s if available, chopped roughly

Water - 2 1/2 litres
Salt - 1 tbsp

Method:

  • Place all ingredients in a large pan, cover, bring to the boil, reduce heat and simmer gently for  1 1/2 hours
  • Strain liquid discarding solids.
  • Keep refrigerated.
