Ingredients:
Green beans - 125 gms
Fresh ginger root - 5 cm
Light soy sauce - 2 tsp
Grated peel of one lemon
Method:
Green beans - 125 gms

Method:
- Top and tail the green beans and remove the strings.
- Peel and grate the ginger.
- Bring a large quantity of salted water to the boil.
- Add beans and simmer for 3 to 4 minutes until the are cooked but still firm.
- Drain the beans and plunge immediately into a bowl of iced water.Drain again, pat dry, and chop into bite sized pieces.
- Arrange attractively in serving dish.
- Sprinkle with soy sauce. garnish with freshly grated ginger and lemon peel.
- Serve immediately.
