GREEN BEANS WITH GINGER

Ingredients:
Green beans - 125 gms
Fresh ginger root - 5 cm
Light soy sauce - 2 tsp
Grated peel of one lemon

Method:

  • Top and tail the green beans and remove the strings.
  • Peel and grate the ginger.
  • Bring a large quantity of salted water to the boil.
  • Add beans and simmer for 3 to 4  minutes until the are cooked but still firm.
  • Drain the beans and plunge immediately into a bowl of iced water.Drain again, pat dry, and chop into bite sized pieces.
  • Arrange attractively in serving dish.
  • Sprinkle with soy sauce. garnish with freshly grated ginger and lemon peel.
  • Serve immediately.
