FRIED PRAWN BALLS

Ingredients:
Prawns - 500 gms (shelled, de-veined and chopped)
Spring onions - 3
Fresh water chestnuts - 6-8 (peeled, washed and finely chopped)
Salt - 2 tsp
Dry sherry - 2 tsp
Ginger - 1 tsp (grated)
Egg white - 1 (beaten until stiff)
Corn flour - 2 tsp
Oil for frying
Chinese red sauce - 1 cup

Method:

  • Chop spring onions very finely.
  • Mix prawns, water chestnuts, spring onions, salt, sherry and ginger in a bowl.
  • Add egg white to the mixture with corn flour. Make walnut size balls.
  • Heat oil and fry a few balls at a time until golden brown.
  • Drain on kitchen paper and serve hot with sauce.
