CRISPY SMALL FISH

Ingredients:
Small fish - 500 gms (cleaned, washed and dried)
Soya sauce - 1 tbsp
Cooking wine - 1 tbsp
Sat - 1 tsp
Cornflour - 1 tbsp
Egg white - 1 (optional)
Vegetable oil - 1 cup
Hot szechwan sauce - 1 cup

Method:

  • Place fish i a bowl, add salt, wine , soya sauce, egg white and corn flour. Rub well. Leave aside for one hour.
  • Heat oil and deep fry until crisp. Drain on an absorbent paper.
  • Serve hot with szechwan sauce.
