Ingredients:
Woon sen noodles - 250 gms
Bacon strips - 2
Whole crabs - 2 or
Crabs claws - 500 gms
Coriander stalks - 2 (broken in half)
Ginger - 1 tsp
Garlic cloves -3-4
Ground white pepper -1 tbsp
Soya sauce - 1 soupspoon
Coriander leaves - 2 tbsp
Spring onions - 2
Butter
For the stock:
Chicken stock - 2 cups
Oyster sauce -2 soupspoons
brandy/whiskey - 1/2 tsp
Sugar - 1 tsp
Method:
Woon sen noodles - 250 gms

Method:
- The stock: To make stock, put all the ingredients into a saucepan, bring to the boil, reduce the heat and simmer for about 5 minutes. Remove from the heat and set aside.
- The crabs with noodles: Soak the noodles in cold water for about 5 minutes until soft.
- Meanwhile, chop the garlic and grate the ginger. Set aside.
- Slice the spring onions and set aside.
- Plae the bacon into the bottom of a saucepan with the coriander stalks, ginger, garlic and pepper..
- Add the noodles and butter, soy sauce and the prepared stock.
- Cover the pan and bring to the boil.
- When it starts to bubble, add the crab and cook for a further five minutes.
- Mix well, add the coriander leaves nd spring onion, cover again and continue cooking for another 5 minutes.
- If there is too much liquid spoon some off before serving,
