Calamari - 400 g
Prawns - 6
Oil - 6 tbsp
Spring onion (chopped)
Fresh coriander

For dressing:
Lemongrass - 4 tbsp (chopped)
Chillies - 3 (chopped)
Shallots - 4 tbsp (chopped)
Sugar - 3 tsp
Lime juice - 2 tsp
Fish sauce - 2 tsp
Roasted chilli powder - 1 tsp


  • First, mix the finely chopped lemongrass, chillies and shallots together in a bowl with the sugar, lime juice, fish sauce and roasted chilli powder.
  • Set aside. Chop the calamari. Heat oil in a frying pan and fry the prawns and calamari over a high heat until just cooked.
  • Transfer to a salad bowl, or individual bowls, and dress with the previously made sauce.
  • Serve garnished with chopped spring onions and fresh coriander.
