TOMATO AND CHEESE SOUP

Ingredients:
Butter - 25 gms
Onion - 1 (chopped)
Plain flour - 25 gms
Milk -600 ml
Stock or water - 300 ml
Tomatoes - 2 (skinned, seeded and cut into strips)
Tomato puree - 3 tbsp
Salt and pepper
Cheddar cheese - 175 gms (grated)

Method:

  •  Melt the butter in a saucepan. Add the onion and fry until it is softened.
  • Stir in the flour and cook for 2 mins,then gradually stir in the milk and stock.
  • Bring to the boil,stirring,and simmer until thickened.
  • Stir in the tomatoes,tomato paste and salt and pepper to taste.Heat thorough gently.
  • Add the cheese and stir until melted.Serve hot.
