Ingredients:
Cold, dry cooked rice - 350 gms
Groundnut oil - 2 tbsp
Chinese soy sauce - 2 tbsp
Scallions (spring onions) - 6-8 (coarsely chopped)
Method:
Cold, dry cooked rice - 350 gms

Method:
- Heat the oil in a wok and add the rice.
- Stir fry the rice until it begins to colour.
- Sprinkle the soy sauce over the rice and add the scallions and stir fry for another minute.
- Serve immediately.
