Ingredients:
For papdi:
Maida - 1 cup
ghee or oil - 2 tbsp
Ajwain seeds - 1/4 tsp
Salt to taste
Oil for deep fry
For Chat:
Green chutney
Tamarind chutney
Chat masala
Plain sev
Beaten fresh curd
Salt to taste
Potatoes - 1/2 cup (boiled, peeled and chopped)
Chick peas - 1/2 cup (boiled)
Onion - 1 (chopped)
Coriander leaves - 2 tbsp (chopped)
Method:
For papdi:

Method:
- Mix maida, ghee, salt and ajwain seeds. Add enough water and knead into soft dough.
- Cover and keep aside for 20 minutes.
- divide the dough into small portions. Roll each portion into thin large circle using dry flour.
- Prick all over with fork. Cut out small rounds from it with cutter.
- Fry them in hot until golden colour and crispy.
- Drain on paper towel.
- Store in airtight container when it is completely cool.
- Crush coarsely the papdis. Spread the crushed papdis in a large plate.
- Add potatoes, chick peas and onions all over.
- Drizzle beaten curd over them.
- Sprinkle chutneys, salt, cumin and chat masala all over.
- Garnish with coriander leaves and serve immediately.:
