Japanese light soy sauce - 3 tbsp
Garlic cloves - 1-2
Japanese dark soy sauce - 6 tbsp
Mirin, sake or dry sherry with 1 1/2 tbsp sugar - 3 tbsp
Sugar - 1 tbsp
Lime or lemon juice - 1/2 tbsp


  • Crush the garlic and transfer on to a piece of wet muslin.
  • Squeeze the liquid out. Exactly one tsp of this will be needed for the preparation of the sauce.
  • Mix the garlic juice with all other ingredients stirring, until the sugar has dissolved.
  • Serve the sauce in small individual bowls.
