RASPBERRY AND OATMEAL CREAM

Ingredients:
Oatmeal - 4 tbsp
Vanilla essence - 1/4 tsp
Thick cream  - 300 ml (chilled)
castor sugar - 2 tbsp
Raspberries - 225 gms
Mint sprigs to garnish

Method:

  • Heat the grill to medium low and when hot, toast the oatmeal lightly on a baking tray. Set the oatmeal aside.
  • Whip the cream with vanilla essence until it will hold soft peaks, gradually adding the castor sugar.
  • Fold the toasted oatmeal into the cream. Reserve several of the best berries and fold the rest into the cream.
  • Spoon the mixture into glass, garnish with the reserved raspberries and mint, if using and serve.
