MAMIDI TURUMU PACHADI (GRATED MANGO PICKLE)

Ingredients:
Raw mangoes - 1 kg (peeled and grated)
Chilli powder - 150 gms
Salt - 150 gms
Turmeric - 2 tsp
Fenugreek powder -  1 tbsp
Garlic paste - 2 tbsp

For Talimpu:
Groundnut oil - 200 ml
Dry red chillies - 4
Mustard seeds - 2 tsp
Asafoetida - 1/2 tsp
Garlic cloves - 10 (crushed)
Curry leaves  - few

Method:

  • Wash and wipe the mangoes with dry cloth. Peel and grate the mangoes.
  • Place the grated mangoes in a bowl and mix with remaining ingredients.
  • Heat the oil; add red chillies, crushed garlic, mustard seeds, asafoetida and curry leaves. Allow them to splutter then switch off the flame and let it cool.
  • When the oil is in normal temperature, add the mango mixture and mix well.
  • Store in glass jar.
