Raw mangoes - 1 kg (peeled and grated)
Chilli powder - 150 gms
Salt - 100 gms
Jaggery - 300 gms (grated)
Turmeric - 1 tsp
Fenugreek powder - 1 tsp
Mustard powder - 1 tbsp
Oil - 250 ml
Method:
- Wash and wipe the mangoes with dry cloth.
- Peel and grate the mangoes.
- Heat the oil in broad vessel; add grated mango and cook till soft.
- Then add grated jaggery and cook till the jaggery melts.
- Add remaining ingredients and mix well.
- Cook another five minutes and remove from the flame.
- Cool the pickle completely and then store in dry glass jar.
