COCONUT AND ONION INSTANT PICKLE

Ingredients:
Sambar onions - 200 gms
fresh coconut - 1 cup (grated)
Sesame oil- 100 ml
Red chilli powder - 1 tbsp
Salt to taste
Vinegar - 1 tbsp
Mustard seeds - 1 tsp
Curry leaves -  few

Method:

  • Peel the onions and leave them whole.
  • Heat the oil in a kadai; fry the onions till light golden brown. Remove the onions.
  • In the same oil add mustard and curry leaves and allow to splutter.
  • Add grated coconut and cook in low flame for 2-3 minutes.
  • Mix salt and chilli powder and cook two more minutes.
  • Mix in the onions and vinegar and stir gently.
  • Serve with rice.
  • it is good for 2-3 days if refrigerate.
