Ingredients:
Brinjals - 250 gms
onions - 2-3
Coriander leaves - 1 medium bunch
Green chillies - 3-4
Ginger garlic paste - 1 tsp
Salt to taste
Turmeric - 1/4 tsp
Chilli powder - 1 tsp
Cumin seeds - 1/2 tsp
Curry leaves - few
Oil - 1 1/2 tbsp
Method:
- Finely chop onions, green chillies and coriander leaves. Slit brinjals into 4.
- Heat the oil in pan; add cumin seeds and curry leaves and allow them to fry.
- Then add chopped onion, green chillies and ginger garlic paste. Cook till onions are translucent.
- Add brinjals, salt, turmeric, chilli powder. Mix well and cook in low flame for 5 minutes.
- Then add enough water and coriander leaves.
- Cover and cook till the brinjals are tender and the gravy is little thick.
- Serve with rice.
