CREAMY RICE PUDDING

Ingredients:
Long grain rice - 250 gms
Brown sugar - 125 gms
Hot milk - 875 ml
Grated lemon rind - 1 tbsp
Raisins - 50 gms
Light cream - 125 ml
Mixed candied fruit - 30 gms
Cinnamon powder - 1 tbsp
Egg -  (beaten)

Method:

  • Wash rice and place in casserole and sprinkle sugar. 
  • Mix in milk and lemon rind.
  • Cover and microwave 18 minutes at Medium -High, stirring twice.
  • Add raisins, cream, fruit and cinnamon; incorporate well.
  • Continue microwaving 19 minutes covered, stirring occasionally.
  • Add egg, mix well and finish microwaving 2 minutes at low uncovered.
  • Serve plain or drizzled with maple syrup.
