CHICKEN CREAM SOUP (Zuppa Crema de Pollo)


Ground rice- 2 tbsp
Milk - 1/2 cup
Chicken consumme - 6 cups
Eggs - 2
Cream - 2 tbsp
Parsley - 2 (chopped)
Lemon juice
Nutmeg, pepper and salt to taste

  • Mix the ground rice smoothly with the milk.
  • Heat the consomme, add the rice mixture, stir until boiling then simmer for about 20 minutes.
  • Season carefully with lemon juice, nutmeg and pepper to taste.
  • A little salt may be required, but this depends on the basic consumme'.
  • Strain the soup and return to the pan to heat.
  • Beat the eggs, add a little of the hot soup, then add the egg mixture gradually to the hot soup.
  • Be sure the soup does not boil.
  • Just before serving, stir in the cream and parsley.
