Ingredients:
Cauliflower - 1 (Medium)
Brinjals - 4
Onions - 2
Green Chilles - 4
Tomatoes - 2
Ginger garlic paste - 2 tsp
Red chilli power - 1 1/2 tsp
Salt to taste
Turmeric - 1/4 tsp
Garam Masala - 1/2 tsp
Coriander leaves - 1 tbsp (chopped)
Urad & Channa dal - 1/2 tsp
Mustard & Cumin seeds - 1/4 tsp
Curry leaves - few
Oil - 2 tbsp
Method:
Cauliflower - 1 (Medium)

Mustard & Cumin seeds - 1/4 tsp

Oil - 2 tbsp
Method:
- Soak cauliflower florets in salted water and then wash in normal water.
- Finely chop onions, green chillies and tomatoes.
- Chop brinjals keep them in salt water.
- Heat oil in kadai, add urad and channa dal, mustard and cumin seeds, curry leaves. Fry till mustard crackles.
- Then add chopped onions, green chillies and ginger garlic paste. Saute till onions are transparent.
- Add tomatoes and cook for 2 minutes.
- Add brinjal pieces and cauliflower, salt, turmeric and red chilli powder.
- Mix well and close the lid and cook in low flame till vegetables are tender. Stir occasionally.Add little water if necessary.
- Add garam masala and coriander leaves. Cook another five minutes.
- Serve with rice and roti.
