Pulao with Nuts

Basmati Rice - 500 gms
Onions - 1 cup (sliced and fried)
Milk - 1 cup
Cashew nuts - 6  tbsp (fried)
Walnuts - 6 tbsp (fried)
Peanuts - 6 tbsp (fried)
Pista - 6 tbsp (fried)
Raisins - 6 tbsp (fried)
Almonds - 6 tbsp (fried)
Rose water - 1 1/2 tbsp
Garam Masala - 3 tsp
Ghee - 1 cup
Saffron -  few strands soaked in warm milk
Salt to taste


  • Soak rice for 30 minutes in sufficient water. Drain and keep aside.
  • Heat ghee in a pan, add garam masala. Saute for few seconds.
  • Add rice and fry till masala coats well to rice.
  • Add salt and water and cook till rice is 3/4th done. Drain the excess water and keep aside.
  • In a thick bottom vessel., sprinkle saffron soaked milk.
  • Spread a layer of rice, then dry fruits, pour remaining saffron mixture, rose water on top. 
  • Place fried onions on top and the vessel with aluminium foil.
  • Cook on very low flame for 30 minutes.
  • Remove from heat ans serve hot.
