Pickled Cucumber

Green Cucumbers - 500 gm
Brown sugar - 1 cup
Cider or white vinegar - 2 cups
Pepper corns - 12
Cloves - 6
Cinnamon - 2 pieces
Red Chillies - 2
Dil -  few springs


  • Wash and scrub the cucumbers, then slice them thinly, apply one dessert spoon of salt and keep aside.
  • In a pan, put vinegar, sugar, spices and dill, bring to boil and let it simmer for 10 -15 minutes.
  • Then wash the cucumber slices, drain them well and add to the boiling vinegar, bring again to just one boil, add a little more salt, if necessary.
  • Bottle whilst hot in hot sterilized jars, seal immediately.
