Ingredients:
Cooked rice - 1 1/2 cups
Cocoa powder - 1/4 cup
Sugar - 3 tbsp
Eggs - 2 (separated)
Vanilla extract - 1 tsp
Salt - 1/8 tsp
Cream of Tartar - 1/4 tsp
Method:
Cooked rice - 1 1/2 cups

Method:
- Combine rice, sugar, cocoa, vanilla and egg yolks in mixing bowl. Stir to blend completely.
- Beat egg whites with salt and cream of tartar into stiff peaks.
- Gently fold egg whites into cocoa mixture.
- Pour into greased baking dish. Bake at 350 F for 15 to 20 minutes or until pudding is set.
