Maida - 1 cup
Wheat flour - 1 cup
Cumin seeds - 1/2 tsp
Oil - 3 tbsp
Oil for frying

For filling:
Urad dal - 1/2 cup (soaked in water)
Oil - 2 tsp
Cumin seeds - 1/2 tsp
Green chillies - 2 (finely chopped)


  • Heat the oil and add cumin seeds. Allow them to splutter. 
  • Mix in the rest of the ingredients for the filling and stir-fry for 3 minutes.
  • Remove and keep aside. 
For making the kachories:
Mix the wheat flour and the maida and the rest of the ingredients. Add enough water to form a soft dough. Divide it into small portions. Flatten each portion and fill with a portion of the filling and reshape into round balls. Flatter each ball carefully into a kachori and deep-fry in oil.
