Method:
- Put the peaches in a large bowl and cover with boiling water.
- Leave for 2 minutes, then drain and peel.
- Cut the peaches in half and remove and discard the stones.
- Dissolve the sugar in the water in a large saucepan.
- Add the peach halves, cover the pan and simmer gently for 5 minutes, or until the peaches are just tender.
- Using a slotted spoon remove the peaches from the syrup and arrange them in a serving dish.
- Increase the heat and boil the syrup rapidly until it reduces ad thickens a little, then pour it over the fruit.
- Serve cold.
