Ingredients:
Toasted white sesame seeds - 2 tbsp
Dashi - 5 tbsp
Dark soy sauce - 1 tbsp
Mirim - 1 tbsp
White miso paste - 1 1/2 tbsp
Sake -1 tbsp
Method:
Toasted white sesame seeds - 2 tbsp

Method:
- Place the toasted sesame seeds in a suribachi or mortar and grind to a paste with a pestle.
- Place the paste in a glass bow and add the miso and dashi.
- Mix to a smooth consistency.
- Add the remaining ingredients and stir well until combined.
- This sauce can be made well ahead of a meal and stored in the refrigerator.
