Toasted white sesame seeds - 2 tbsp
Dashi - 5 tbsp
Dark soy sauce - 1 tbsp
Mirim - 1 tbsp
White miso paste - 1 1/2 tbsp
Sake -1 tbsp


  • Place the toasted sesame seeds in a suribachi or mortar and grind to a paste with a pestle.
  • Place the paste in a glass bow and add the miso and dashi. 
  • Mix to a smooth consistency.
  • Add the remaining ingredients and stir well until combined.
  • This sauce can be made well ahead of a meal and stored in the refrigerator.
