Ingredients:
Chinese leaves - 675 gms
Vegetable oil- 1 tbsp
Garlic cloves - 2 (finely chopped)
Fresh root ginger - 1" (finely chopped)
Oyster sauce - 1 tbsp
Spring onions -4 (cut into 1" lengths)

Method:
Chinese leaves - 675 gms

Method:
- Stack the Chinese leaves together and cut them into 1" slices with a sharp knife.
- Heat the oil in a preheated wok or heavy based frying pan.
- Add the garlic ad ginger and stir fry for about one minute.
- Add the chinese leaves and stir fry for 2 minutes.
- Sprinkle with salt and drizzle with the oyster sauce.
- Toss the leaves over he heat for a further 2 minutes.
- Stir in the spring onions.
- Toss the mixture well, transfer to a warm serving plate and serve.
