TAMMA KAYA (SWORD BEAN)EGURU

Ingredients:
Tamma kayalu - 250 gms
Salt to taste
Turmeric - 1/4 tsp
dry red chillies - 15
Garlic cloves- 6-8
Cumin seeds - 1 tsp
Oil -1 tbsp
Urad dal - 1/2 tsp
Cumin, mustard seeds - 1/2 tsp
Curry leaves - few

Method:

  • Remove the strings and cut tamma kayalu into small pieces. Boil in salted water until tender. drain and keep aside.
  • grind red chillies, garlic and cumin seeds to make fine powder.
  • Heat oil in kadai; add urad dal, cumin, mustard and curry leaves and allow them to crackle.
  • Add tamma kaya pieces, salt, turmeric and ground masala.
  • Stir fry for 3-5 minutes.
  • Serve with rice

తమ్మకాయ ఇగురు 

కావలిసిన వస్తువులు:

తమ్మ కాయలు - 250 గ్రా 
ఉప్పు 
పసుపు - 1/4 tsp 
ఎండు మిర్చి -15
వెల్లులి రేకలు - 6-8
జీలకర్ర - 1 tsp 
నూనె - 1 tbsp 
మినపప్పు - 1/2 tsp 
ఆవాలు, జీలకర్ర - 1/2 tsp 
కరివేపాకు - కొద్దిగా 

తయారీ:

  • తమ్మ కాయల నుంచి పీచు తీసి చిన్న ముక్కలుగా కోసుకోవాలి. వాటిని ఉప్పు నీళ్లలో మెత్తపడేవరకు ఉడికించి నీళ్లు వంచి పక్కన పెట్టుకోవాలి. 
  • ఎండు మిర్చి, వెల్లులి, జీలకర్ర మెత్తగా పొడి చేసుకోవాలి. 
  • బాణలిలో నూనె వేడి చేసి మినప పప్పు, ఆవాలు, జీలకర్ర, కరివేపాకు వేసి వేగిన తరువాత తమ్మకాయ ముక్కలు, పసుపు, ఉప్పు, నూరిన కారం వేసి కలిపి వేయించి దించుకోవాలి.
