Strawberries - 500 gms (chopped)
Kirsch - 3-4 tbsp
Double cream - 300 ml
Small white meringues - 6
Fresh mint sprigs, to decorate


  • Put the strawberries in a bowl, sprinkle over the kirsch, then set aside for 3-4 minutes.
  • Whip the cream until soft peaks form, then gently fold in the strawberries with their juices.
  • Crush the meringues into rough chunks, then scatter over the strawberry mixture and fold in gently.
  • Spoon the strawberry mixture into a glass serving bowl, decorate with mint sprigs and serve immediately.
