FISH SOUP

Ingredients:
Cod or hake's head - 1
Butter - 50 gms
Large onion- 1
Celery sticks - 3
Fish stock - 1 litre
Pinch of saffron
Salt and pepper
Milk -250 ml
Parsley - 1 tbsp (chopped)
Cod or coley - 300 gms

Method:

  • Cover fish head with water and simmer for 25 minutes. Drain and reserve stock.
  • Melt butter and fry chopped onion and celery quickly until transparent but not brown.
  • Add fish stock, saffron and seasoning.
  • Simmer for 10 minutes. Stir in milk and parsley.
  • Skin fish and cut into small pieces.
  • Add to soup and simmer for 5 minutes.
  • Season and serve.
