WHEAT CHOCOLATE CAKE

Ingredients:
Wheat flour - 100 gms
Sugar - 50 gms
Ghee - 50 gms
Cashew nuts - 1 tbsp (chopped)
Kishmish - 1 tbsp (chopped)
Cocoa powder - 2 tsp
Baking soda- 1 tsp
Apple - 1 (peeled and grated)
Grated Coconut - 1 tsp
Milk - as required

Method:

  • Take 1 tsp of ghee, fry cashew nuts and kishmish till golden. Remove and keep aside.
  • Add remaining ghee, saute wheat flour in low flame, stir continuously till aroma comes.
  • Grind sugar, apple and milk to make smooth batter.
  • Stir wheat flour, cocoa powder, baking soda in batter.
  • Grease tin with little ghee, pour the batter in it and top up with nuts, coconut and kishmish.
  • Steam cook for 15 minutes.
  • Remove and let it cool.

PALAK KHEER

Ingredients:
Milk - 500 ml
Spinach puree - 4 tbsp
Sugar - 100 gms
Cashew - 10
Kishmish - 10
Cardamom powder - 1/4 tsp
Ghee - 1 tsp

Method:

  • Fry cashew nus and kishmish in ghee and keep aside.
  • Bring to boil the milk in thick bottom vessel.
  • When it starts boiling add sugar, spinach puree and cook in low flame for 5 minutes or until sugar dissolves.
  • Lastly add cardamom powder, cashew and kishmish.
  • Serve hot or chilled.


                                                       స్పినాచ్ ఖీర్ (పాలకూర పాయసం)
కావలిసిన వస్తువులు:
పాలు - 500 ml
పాలకూర puree  - 4 tbsp
పంచదార - 100 గ్రా
జీడి పప్పు  - 10
కిష్మిష్ - 10
ఏలకుల పొడి - 1/4 tsp
నెయ్యి - 1 tsp

తయారీ:

  • జీడి పప్పు , కిష్మిష్ నేతిలో వేయించి పక్కన పెట్టుకోవాలి. 
  • పాలు వేడి చేసి మరుగుతున్నప్పుడు పాలకూర puree , పంచదార  వేసి బాగా కలిపి  5 ని ఉడికించాలి. 
  • చివరికి ఏలకుల పొడి, జీడి పప్పు, కిష్మిష్ వేసి దించాలి. 
  • దీనిని  వేడిగా కానీ చల్లగా కానీ వడ్డించాలి


CAULIFLOWER PULAO

Ingredients:
Cauliflower - 1 (small)
Rice - 250 gms
Salt to taste
Onions - 2
Ghee - 2 tbsp
Lemon  - 1/2

Masala:
Grated coconut - 1/2 cup
Green chillies - 12
Garlic pod - 1
Cloves - 4
Cardamom - 4
Cinnamon stick - 1/2"
Ginger - small piece

Method:

  • Grind all the masala ingredients to make fine paste using little water.
  • Separate florets and parboil florets in salted water. Drain and keep aside.
  • Heat ghee in thick bottom vessel, add chopped onion and fry till golden brown.
  • Add ground masala, fry till oil floats.
  • Add cauliflower florets, salt and rice. Mix well and fry for 2-3 minutes.
  • Then add sufficient water and close the lid.
  • Cook till rice is done and water is completely absorbed.
  • Lastly add lemon juice and serve hot.  
                  
                           కాలీఫ్లవర్ పులావు 

కావలిసిన వస్తువులు:
కాలీఫ్లవర్ - 1 చిన్నది 
బియ్యం - 250 గ్రా 
ఉల్లిపాయలు - 2
ఉప్పు - సరిపడా 
నిమ్మకాయ - 1/2
నెయ్యి - 2 tbsp 

మసాలా ముద్ద:
కొబ్బరికాయ తురుము - 1/2 cup 
పచ్చి మిరపకాయలు - 12
వెల్లుల్లి- 1
లవంగాలు - 4
ఏలకులు - 4
దాల్చిన చెక్క - 1/2"
అల్లం - చిన్న ముక్క 

తయారీ :
  • మసాలా వస్తువులను మెత్తగా నూరుకొని పెట్టుకోవాలి. 
  • కాలీఫ్లవర్ విడతీసి ఉప్పు నీళ్ళలో కొద్దిగా ఉడికించాలి.  నీరు వంచి ముక్కలు పక్కన పెట్టుకోవాలి. 
  • బియ్యం కడిగి 15 ని నాననివ్వాలి. 
  • కళాయిలో నెయ్యి పోసి, వేడెక్కిన తరువాత తరిగిన ఉల్లిపాయలు వేసి ఎర్రగా వేయించండి.  దానిలో నూరిన మసాలా ముద్దను కలిపి నూనె విడి పడేవరకు వేయించండి. 
  • తరువాత కాలీఫ్లవర్ ముక్కలు, ఉప్పు, బియ్యం వేసి బాగా కలిపి కాసేపు వేయించండి. 
  • బియ్యంకు  సరిపడా నీళ్ళు పోసి మూత పెట్టి ఉడికించాలి. 
  • ఉడికిన తరువాత నిమ్మకాయ రసం పిండి వేడిగా వడ్డించండి

SWEDISH JELLY SLICES

Ingredients:
Sifted all purpose flour - 1 3/4 cups
Butter - 3/4 cup
Grated lemon peel - 1 tsp
Sugar - 3/4 cup
Egg -1
Baking powder - 1 1/2 tsp
Salt - 1/4 tsp
Coriander powder - 1 tsp
Cardamom powder - 1/2 tsp
Red cherry jelly - 250 gms
Egg yolk - 1
Sugar - 1/4 cup
Water - 2 tsp
Toasted blanched almonds - 1/4 cup (finely chopped)

Method:

  • Cream butter with lemon peel. Add 3/4 cup sugar gradually, creaming thoroughly. Add egg and beat well.
  • Blend flour, baking powder, salt, and spices; add to creamed mixture and mix well.
  • Chill dough until easy to handle.
  • On a floured surface, roll dough into a 12*8 " rectangle. Cut into 12 strips (1")
  • Place strips 4" apart on greased cookie sheets; cookies will spread. Make a depression, 1/4" wide and 1/4" deep, lengthwise down the center of each strip. Fill depressions with jelly.
  • Bake at 375 F for 10 minutes.
  • Meanwhile, combine egg yolk, 1/4 cup sugar, and water and beat until thick.
  • Remove cookies from oven. Brush egg yolk mixture on hot cookies and sprinkle with almonds. Return cookies to oven and bake 5 minutes.
  • Cool cookies 5 minutes on cookie sheets. Add more jelly, if desired.
  • Cut diagonally into 1" slices. 
  • Cool on wire rack.

SWEET AND SOUR ONIONS

Ingredients:
Small onions - 450 gms
Olive oil - 2 tbsp
Cloves - 2
Bay leaf - 1
Salt
Vinegar - 2 tbsp
Sugar - 1 tbsp

Method:

  • Put the unpeeled onions into boiling water, and cook for 10 minutes.
  • Peel them, and put into a pan with olive oil, cloves, bay leaf and salt. Simmer for 5 minutes.
  • Add the vinegar and sugar, and cook until the sauce is syrupy.
  • These onions may be served hot or cold. 

CHINESE ALMOND COOKIES

Ingredients:
Blanched almonds - 2 1/2 cups
Sifted All purpose flour - 2 1/4 cups
Butter - 1 1/4 cup
Sugar - 1 1/4 cups

Method:

  • Finely chop 1 2/3 cups almonds; toast remaining almonds, if desired, and set aside for garnish.
  • Mix flour and chopped almonds; set aside.
  • Cream butter; add sugar gradually, beating thoroughly.
  • Add flour mixture gradually, mixing until blended after each addition.
  • Divide dough into three parts, wrap in waxed paper, and chill for one hour or until easy to handle.
  • Shape dough into 1" balls; place about 2" apart on ungreased cookie sheets and flatten each until about 1/2" thick. press a whole almond onto the top of each.
  • Bake at 325 F for 10-15 minutes.
  • Immediately remove cookies to wire rack.

PULIHORA UPMA

Ingredients:
Rice rawa - 500 gms
Lemons - 4
Oil- 100 gms
Mustard seeds- 1 tsp
Urad dal - 1 tbsp
Channa dal - 1 tbsp
Asafoetida - small piece
Salt to taste
Turmeric -  1/4 tsp
Red chillies - 4
Green chillies - 4
Ginger - 1 tsp (grated)
Curry leaves - few

Method:

  • Boil one litre of water in vessel. Add 1 tbsp of oil and rice rawa.Mix  without lumps and  Cook in low flame for 5 minutes or until done.
  • Remove and transfer to large plate.
  • Heat oil in a pan, add broken red chillies, urad dal, channa dal, asafoetida, mustard seeds and curry leaves. Fry till mustard crackles.
  • Add chopped green chillies and ginger. Remove and pour this over rawa.
  • Add salt, lemon juice, turmeric to the rawa mixture.
  • Mix gently and serve.

GREEN GARLIC SAUCE

Ingredients:
Green Chillies - 10
Garlic cloves - 10
Coriander leaves - 2 tbsp (chopped)
Lemon juice - 1/4 cup
Salt and pepper to taste
Sugar - 1/2 tsp

Method:

  • Finely chop green chillies and garlic cloves.
  • Mix all the ingredients together in a mixing bowl.
  • Close the lid and keep aside for one hour.
  • Serve as dipping.
